They test your responsibility. Say you do not improvise: you check the allergen sheet, separate utensils and surfaces, tell the chef and confirm the final dish with the server.

They measure your sense of management. Talk about using trimmings in stocks and stews, rotating stock first in, first out and following the portions on the recipe card.

They look for calm and communication. Explain that you say so right away at the pass, correct or refire the dish without arguing and adjust priorities with the team.
