They want rigor. Mention temperature control, date labeling, separating raw and cooked foods, cleaning and the HACCP records.

They test your responsibility. Say you do not improvise: you check the allergen sheet, separate utensils and surfaces, tell the chef and confirm the final dish with the server.

They measure your sense of management. Talk about using trimmings in stocks and stews, rotating stock first in, first out and following the portions on the recipe card.

They look for calm and communication. Explain that you say so right away at the pass, correct or refire the dish without arguing and adjust priorities with the team.

What do I put on a chef CV if I have not worked in a famous restaurant?
You do not need a famous name. Describe the type of cuisine, the volume of covers and your responsibilities. A lunch service for 80 guests also shows pace and organisation.
How do I show experience on several sections?
One line per section with what you handle (sauté, garde manger, pastry, grill) and one number per job. The head chef sees where you can cover.
Do I need a food hygiene certificate?
Anyone handling food needs food hygiene training, and a Level 2 certificate is the usual proof. List it along with your allergen training.
